Coffee Ice Cream






Coffee Ice Cream

Base ingredients:


4 C heavy cream
                                                                    2/3 C sugar (or to taste)                                                              
1 tsp vanilla extract
2 C whole milk

Add:
2-3 Tbsp (per taste) coffee crystals
In a bowl whisk cream, sugar and crystals until

sugar and coffee has dissolved completely 
Add milk and vanilla
Cover bowl and chill for at least an hour-
 I did over night for the sugar to dissolve

Make according to you ice cream maker

Use the base and chage the add in:
Maple Nut use maple syrup and extract add nuts
Chocolate Add chocolate syrup and crushed oreos
Strawberry Add strawberry syrup and chopped strawberries

potato salad

As many of you know
or don't know
As I make some of the family 
favorites
I have been posting them so that
my kids and family members
 will have them
I figured it would
 be nice not to have to
ask for them, that 
no matter where
 they are they can 
get online and find them
most being tutorials
So here is 
my potato salad recipe
I really don't measure anything

Chop:
pickles
celery
black olives
green onions
and add mustard to mix


cube potatoes
and boil
with eggs


boil potatoes until fork tender

run cooked potatoes
under water to stop cooking process
allow eggs to cool 
 peel and chop

while some of the potatoes
are cooling I smash 
them on the side of the bowl
this makes it a little creamier




I add the potatoes 
and eggs to the pickle combo
and refrigerate
until chilled


Add just enough Hellman's
or Best Foods Mayo
to moisten


Allow flavors to meld together and cool


Viola!

In a Snap

This is a no brainer recipe
4lbs green beans


snapped and put in 
a crockpot
1 C water


1 pkg turkey bacon crumbles


cook until done!

Sun Dried Tomato Chicken Fettucine

I'd like to say I measured
 this but I didn't
I was inspired by this recipe
Fast Chicken Fettucine - BHG
What you need:
Sun Dried tomaotes in oil
Parmesan-Romono Cheese


Fettuccine - I used the garden
has tomato
spinach 
and
carrot


and chicken
you can use leftovers
cut up into bite size pieces

I sauteed it using some of the oil
 from the sun-dried tomato jar
adding the sun-dried tomatoes
and leftover
grilled bell pepper
and garlic 
Honestly could dump
 any veggie in it


while that was cooking 
I boiled the water
and cooked the fettuccine
then drained 
and dumped it in 
to the saute pan


topped with cheese
Easy Peasy...
oh and of course
I used my 
bestest china paper plates

Whoopie Pies


A tried to make these a while back
without a pan and it was a disaster
Sooo when I saw this
 in the store I knew it was for me


I used a reg cake mix
made according 
to pkg direction
the 1st batch was 2/3 full 
like they said
and they came out thick
you are suppose 
to put 2 of them together


so the second batch 
came out smaller
but we preferred
 the bigger ones 
and I cut them in half
after they cooled


 Made the frosting:
 1 1/2 C powder sugar
2 C marshmallow cream
1 C butter flavored crisco
(you could use butter)


 once cut dollop the frosting


 and put the top on


the one on the right is cut
the one on the left is 2


 They definitely were a hit!

Pink Lemonade Cake

This cake is sweet and tart...





  • Cake:





  • Butter for coating pan





  • 1 box white cake mix





  • oil




  • water





  • 2 tablespoons pink lemonade drink powder





  • 3 eggs







  • Frosting:






  • 1 pound confectioners' (powder) sugar





  • 1/2 cup unsalted butter (1 stick), softened





  • 3 tablespoons frozen pink lemonade concentrate





  • 1 teaspoon lemon extract




  •  Butter two 8-inch round cake pans
     and line the bottom with parchment
    For the cake, in a large bowl,
     mix cake according to pkg directions
    adding the 3 Tbsp pink lemonade mix. /
    Pour the batter evenly into the prepared pans
    . Bake for 30 to 35 minutes or until golden
    and a toothpick inserted in the centers of the cakes
     comes out clean. Let the cakes cool
     in the pans for 10 minuets. Carefully turn cakes
     out onto a wire rack to cool completely.



    For the frosting,
     beat together the confectioners' sugar
     and butter until fluffy.
     Beat in the remaining
     ingredients until combined.



    Frost the cake and serve!
    Makes 10 - 12 servings.
