Stuffed Acorn Squash

Stuffed Acorn Squash
2 servings

A healthier version is on parenthesis
1 small acorn squash
1 lb ground lean pork or (turkey/chicken)
¼ c chopped celery
¼ c chop onion
¼ tsp curry powder(or more to taste)
dash ground cinnamon
3/4 c unsweetened applesauce
4 Tbs bread crumbs (wheat germ/cooked rice/ cooked quinoa)

Half and clean out squash and bake squash cut side down for 50 min at 350 degrees 
While squash is cooking: 
Brown meat w/ celery and onion.  Stirring in cinnamon, curry and applesauce after the meat is browned.  Add in bread crumbs (wheat germ/cooked quinoa or cooked rice). 
Stuff the squash w/ meat mix after it’s cooked and return to oven cut side up for 20 min.
