Gingered Squash and Pear Soup

I adapted this recipe from this months Woman's Day Magazine:
Gingered Squash and Pear Soup Recipe
By Woman's Day Kitchen

1 chopped onion
1 Tbsp grated ginger
1 large butternut squash
2 ripe pears
4 cups low fat low salt chicken broth
Salt and pepper (to taste)

Garnish: Sour cream and toasted pumpkin seeds

Sauté chopped onion and grated ginger in a little oil in a large pot until onion is tender. I punctured the squash skin with a fork then microwaved the butternut for a 1 minute to soften the peel - I then peeled and chopped it up and put it in a crockpot. While it was microwaving I , peeled, cored and chopped the pears adding them also to the crockpot. Add the chicken broth and salt and pepper to taste. Cook until the pears and squash is tender. Cool slightly, then purée until smooth. Garnish with sour cream and toasted pumpkin seeds. Makes 8 cups.

  1. Honey it looks yummie love ya chuck

  2. Hi Jo, I found your blog from a visit at Rue's. This soup looks fabulous. A perfect celebration of fall. We have freecycle in our community and it has been a great resource for us. Saved a few things from going into a landfill. Love your photos from flea markets and such. I think the midwest has so much more to offer in that area. We just don't have good stuff out west!

  3. I love butternut squash soup -- but the addition of the pear -- perfection I think -- this will definitely be my soup recipe when I make my next batch!

  4. Your photo is so pretty and really says bring on the hot soup on a cold day. I love your recipe and have copied it to make at a later time. Thank you.

  5. I love fall and the opportunity to make soup and this recipe looks like the perfect fall dish! It sounds delicious...can't wait to try it.

  6. I never thought of putting BNS and pear together, but I'll try anything once :)
