Carrot Radish Salad


This must be
 the month of Carrot Salads 
for me
(either that or I had leftover carrots 
from last week! 
or maybe all the bunnies posted on blogs...)



Carrot Radish Salad

3 c shredded Carrots
7 radishes sliced and cut into strips
1/4 C raisins

Lime Vinaigrette

2 Tbsp lime juice
2 Tbsp olive oil
1/2 tsp sugar
(I used 1/4 tsp agave)
1/2 trp salt
1/2 tsp grated lime peel
lettuce leaves (optional)

In a bowl combine
carrots, raisins and radishes

In a tight fitting jar with lid:
combine vinaigrette ingredients
drizzle over carrot mix
to evenly coat
Serve on lettuce lined bowl
