Red Enchiladas

meat of your choice
I usually use shredded beef
but had leftover hamburger
canned enchilada sauce
cheese
onions
black olives
truly anything you want to get rid of
Four tortillas
(because corn ones are denser
they are difficult to roll w/o breaking)

If you have a gas range
the best way to soften the tortillas
so they are easy to roll
is to put them directly on the burner
Otherwise use a microwave

Put your filling in  the lower section of the tortilla
fold in the sides

and roll

and roll

place side by side in the pan
I usually line the pan with parchment paper
for easy clean up

pour sauce of your choice

top with cheese, black olives, onions

bake at 350 degrees until hot and bubbly through out

see you like steppenwolf -- my husband's FAV song has been "born to be wild" even though there's no "wild" left in us! LOL.

  2. YUM...I usually think of enchiladas made with corn tortillas. I'll have to give these a try with flour.

    Blessings!
